Learn to create a wide range of dishes from one of the
most intriguing cuisines of the world, in a relaxing
environment where you will meet others who share
your passion for food and for life.


During this residential cooking course, you will be
introduced to different preparations of rice, vegetable
dishes, the use of coconut in food and the preparation
of a Keralan festive lunch or dinner (known as a ‘Sadya’)
in our Chef's Special programme


The level will be basic Keralan vegetarian cooking with a
special focus on the vegetables and ingredients
available in other countries.


Our Keralan Cooking Adventure is not just about being
in the kitchen. You will also explore the spirit of the
region and its people, with a range of captivating
excursions that will be inspiring and relaxing.


This is an exclusive course that will give you hands-on
experience and so is limited to a maximum of eight
people. The duration of the course will be eight days
and seven nights for our Week long Cooking Adventure
and 3 days and 3 nights for our 3 day Cooking
Residencies


How this holiday makes a difference.

We believe the enjoyment of excellent foods should be
combined with efforts to save the countless traditional
grains, vegetables, fruits, and milk products that are
disappearing due to the prevalence of convenience
food and agribusiness. We want to protect our amazing
food heritage. In a world where the pleasures of taste
are not always learned through leisurely meals around
a lively table, we must make a conscious effort to
explore, question and experiment.

Here we are introducing the south Indian food which is
not served in restaurants in the way it is cooked at
home .Also an opportunity to learn the way how it is
cooked in the homesteads rather than in the
commercial mass eating places .This also helps other
communities to know more about the south Indian food,
it’s wonderful vegetarian options , how to spice a food
properly and an interactive opportunity to learn
cooking from the people who know how to do it and this
also supports the growers of the particular foods to
survive on their activity by creating a demand for their
produce in the situation of multinational food
conglomerates occupying the big chunk of the market
and displacing traditional small food suppliers.

Here taste is not standardized, regional versions of
food is introduced, the consumer of the food know
about the way it comes to the table , protects regional
cultural identities of food and gastronomic traditions,
safeguards foods and cultivation and processing
techniques inherited from tradition and defend
domestic and wild animal and vegetable species.


This seven day cooking adventure is activity filled and
supports local economy by using the produces and
services of the local community and contributing to it .
The participants also gain very special in-depth into the
local traditions, culture, food preparation, and the use
of food in the local health traditions and an opportunity
to experience the Ayurvedic medical massage from the
real treatment centre of Ayurveda in the area if you
desire so.
