Im Reich des Pfeffer-Königs
Auf seiner Pfefferfarm in Kerala schuf der Jurist Jacob Mathew
eines der ersten Projekte Südindiens für ökologische
Landwirtschaft und sanften Tourismus.
Von Julia Kospach.

Jacob Mathew ist ein freundlicher Mann. Sein pausbäckiges,
braunes Gesicht ziert ein buschiger, leicht angegrauter
Schnurrbart.
Jacob Mathews

secrets of their preparation. Accommodation is in hyper-green bungalows
overlooking lush forest on a bio-organic family run farm that is reintroducing a range
of spices and fruits that were lost to the region when the rubber plantations took over.

Cooking in Kerala is an eight-day residential cookery course in the Indian state that’
s scribbled over with picturesque backwaters (and is aptly dubbed God’s Own
Country). The setting is in a traditional Keralan home set on the grounds of a
working, bio-organic spice garden. There are intriguing visits to local masala and
curry powder production units. A focus on Keralan cuisine, the course culminates in
the preparation of a Keralan festive lunch or dinner (known as a Sadya).

SOUTH INDIAN VEGETARIAN, Kerala

One hour east of Cochin, The Pimenta is a grandiose name for what is effectively a family
kitchen on a seven-acre spice plantation in the lush, forested foothills of Kerala’s Western
Ghats. With four modest bungalows, and dinners round the family dining table, this is no
marble-topped, five-star Oberoi extravaganza, but what it lacks in glitz, it more than makes
up for in authenticity, with classes in delicious Keralan vegetarian specialities led by the farm
owner and passionate cook, Jacob Mathew, and his 67-year-old mother. Courses comprise
afternoon cooking sessions, with mornings at nearby markets, temples, a cotton-weaving
workshop and elephant training centre, where guests help scrub and bathe the beasts.
